the monday mocha choco-chocolate chip blissout

Like a fine wine, this cookie here presented has been aged to perfection, acquiring deep notes of CHEWY and TOFFEE-BURN and OMFG I LOVE LIFE. Did it require barrels and equipment? Naaaaaah, just some forsight. Friday night I made a batch of Dreena's homestyle chocolate chip cookies (which I think I've made at least ten times before, they must be my favourite or something) with two extra tablespoons of cocoa, a pinch of instant coffee powder, and coarse salt instead of fine. And then the dough sat in the fridge all weekend, getting dryer and more flavorful every day. I must pledge my allegiance to this NY Times article by the way, for spilling the perfect cookie beans... because....

I want to run away with this disc of chocolate bakery love. I am so glad I made just one, or I'd pretty much still be in the kitchen contemplating all the cocoa-laced angels that were trumpeting every bite as I sank deeper into tri-textured molten crispy chewy transcendence.

That is all. :)

(oh, except that I threw a couple basil leaves onto a few bites and that was even fabulouser. There's no stopping it!)

Yes, cookies make people happy. Especially if they burst with chocolate and coffe flavour.

I love that article too. :-) It was an interesting read because it dovetailed on a "secret" I had been given by a friend at work whose friend worked at a famous cookie bakery in NY. The secret was about the overnight refrigeration, which I've actually found does improve taste and texture. Those look delicious. I love coarse salt on chocolate chip cookies. It really brings out the flavor.

Those look awesome! I've read that article, but I haven't tried it yet. Mainly because I don't think cookie dough would be safe in my fridge for very long. It would somehow end up in my tummy.

Oh my gosh, that cookie looks like perfection! Ever since I read that article a while back, I've been meaning to refrigerate my dough...but I always make cookies in the spur of the moment and I would definitely not be able to wait 36 hours for my dough to chill! Wherever you got your discipline to wait so long, you should let me know! I do remember to sprinkle some salt on the cookie tops every once in a while though. (I will say that this makes me extra thirsty while I'm chomping on the cookies, hehe.)

i love dreena's choc chip cookies!!!! they are so delicious and chewy. i can taste them right now. i always make a crapload of ice cream sandwiches out of them. your version looks so decadent.
