Old-Fashioned Comfort Food (no blizzards inside!)

Good old spinach 'sagna... it could have used a bunch more sauce, but I like my 'sagna juicy enough to squish. Marinara lack is all part and parcel of making vegan food from a communal larder - my mom lives with 3 other people so I have to be aware of supplies - but it went over well with the roommates and I'm so using almesan as a topper again! No more lame-o breadcrumbs. Also, I came home today to hear that the german meat-lover had finished up the leftovers, so huzzah and score-point for tofu ricotta!!

Chipotle butternut chili. I'd been craving chili forevers, so I made a ton and I was really happy I did. There was cornbread to go with it, but got snarfed up before a picture was taken (oh, I loves me cornbread... so simple and grainy and sweetly good... mmm)

And tonight some simple dhal, after a looooooooong day of shopping for christmas candies. Okay, so it's fun to buy sweets for sweethearts, but after eating a food court so-called "Veggie Delite" sub sandwich** of Incredible Blandness I needed immediate protein-ified spicy remedying after getting home. Serves me for even entering a mall. ¬_¬ (the dhal was good medicine)

does your butternut chili have tomatoes in it? I've heard some people use squash to replace tomato, but I have never seen said recipes...

Oh that chili looks so tasty. I just love butternut squash in my chili!! Looks like your lasagna was quite a hit! I'll have to give almesan a try, sounds delish.

I've never tried butternut squash in chili, but I absolutely love butternut squash, so now I think I'll have to try it!

these are three great dishes to battle this winter's cold weather! i have yet to try vegan lasagna, but from the sounds of it, you must make it good if you got a meat-lover to scarf down tofu! score for you. (it looks muy yummy.) i agree, cornbread is fabulous - and what could go better with it than a chili with butternut squash? how creative and delicious-sounding!

poor you for having to endure a food court sandwich! what we need is a healthy, nationwide, all-vegan fast food chain.

vegetalion - yeah, the chili has tomatoes in it, but also a good bunch of roasted squash (a lot of squash). I can see where people might use it to replace toms, though - it basically 'stewified' (for lack of a better word) into exact chili consistency.

rubyred - yes! a national vegan chain, or gosh, even something hardcore vegetarian would be so refreshing. I looked around and basically saw a lot of burger places and a lot of places that use fish sauce. :/

I'm in love with lasagna. And I haven't had chili in waaaaaay too long. I'm inspired to make some. 'Tis the season, after all.
