Sometimes I think I forget that making food for myself should be about what I want sometimes, and not about what's in the fridge, or what recipe technique I've been meaning to try, or how much protein I've gotten in a particular day, or pretty much any reason besides appetite. So when I woke this morning with a one track mind playing "ITALIAN SAUSAGE SOUP" loud and clear, I put beans on to soak post-haste (did you know they only really have to soak for 4 hours?), and ran out for the only thing I needed to get, which was celery (wooooo celery!).
It turned out pretty fast and it's a beautiful thing -- spicy and tomato-ey and full of luscious seitanic veggie goodness. Totally worth every moment and for once I think I'm really gonna look forward to eating the same meal for the next few days... mmmmmm snaussages.... :O~~~~~~~~
I stole the recipe from allrecipes, but I changed it somewhat concerning spices and vegetarian-ness and left the pasta out 'cause this way I can have an extra bread roll with it, you know?
(also, I bet zucchini would be pretty good in this, it was just real expensive at the store today)

You know, I lol'd when I read the part about making a recipe based on what needs using, or how much protein, etc - I am the same way! Soups looks great, btw.
Looks good! I'll have to keep it in mind when soup whether comes around in a few months. (I suggested having pumpkin soup two nights ago and Andy was apalled. 'Soup?! It's 35 degrees [celsius]!' Alas, I will wait until it cools off a little.)

This looks like a great winter soup! Did you know that beans can be quick-soaked in boiling water to reduce the soaking time even further?

I made a sausage soup last night too, must be something about winter that draws us into seitan sausages! This looks really, really good and I do have 3 more sausages to use up, hmmm....

I have to say, Whole Foods is a wonderous place! They have all the greens one could ask for. Nettles, I admit, were out of season, but I was able to find dandelion greens.
I actually have a cold soup recipe from Vegan Planet marked with a post-it. It's Cold Peach Soup with Cashew Cream, but I hate peaches so was going to sub in some mango. Great minds think alike ;)
Andy scrunched up his face when I said 'cold soup', but he can get stuffed. I'm going to make it, and he's going to like it!

That looks great! You can also flash boil kidney beans and cool them off. It'll shock them into doing the same thing soaking them does.
Yep, a bread roll is so much more satisfying with soup than pasta would be IN the soup. It's funny to me that you woke up thinking about soup... I can only think about breakfast-y foods when I wake up. But it's understandable, since the beans were going to take four hours. Planning ahead is good. :) May I have some veggie sausage and a bread roll, please?
A woman after my own heart- you know that fennel is my favorite vegetable, don't you? I like the smell of fennel any time. =)
